If you haven’t subscribed to Everyday Food Magazine yet you should. It’s in the grocery store checkout line as well. It is a Martha Stewart branded magazine that is simply the best recipe magazine that you can buy. Check out their food blog as well called Dinner Tonight. The recipes are simple and easy to follow. And usually they only have a few ingredients, many of which you usually have in your pantry or fridge. Even though they are small on ingredients the recipes are usually BIG on flavor and many recipes are now our household favorites. I have been a subscriber from the beginning and absolutely love getting each new magazine. Bob and I tried this super simple recipe the other night and really loved it. It’s a keeper for sure! The garlic really flavors the oil and the salmon ends up having a nice salted crust (I like salt a lot). And I love green beans! I added a little red pepper flakes for a kick! This recipe will lead to people asking for more beans, if you can believe it.
- 2 teaspoons olive oil
- 4 large garlic cloves, thinly sliced
- 1lb green beans, trimmed
- Coarse salt and ground pepper
- 2 salmon fillets
- red pepper flakes to spice up the beans (optional)
- In a medium nonstick skillet, heat 1 teaspoon oil over medium-high. Add garlic, and cook until golden brown, 30 seconds to 1 minute. Transfer to a plate. Keep oil from garlic in skillet.
- Add green beans and 3 tablespoons water (I added a dash of chicken broth here) to skillet; cover, and cook until tender, 3 to 5 minutes. Don’t over cook. The beans should be still turgid but with a nice sear on them. Drain any liquid. Season green beans with salt, pepper and red pepper flakes to taste. Add to plate with crispy garlic & toss.
- Return skillet to medium-high; add 1 teaspoon oil. Season salmon with 1/2 teaspoon salt and 1 teaspoon pepper; add to skillet. Cover, and cook, turning once, until browned and cooked through, about 8 minutes. Transfer salmon to plate with green beans. Yum!
